Quick & Easy Snack
I am one of those people who gets hungry often. I’m talking like every couple of hours. Everyone in my family teases me about it, but it’s apparently just part of how I work. Because of this quirk, I am always looking for new snacks to have around the house…and I like it even better when they’re healthy!
Energy Balls are one of my favorite snacks! They are sweet, but not too sweet and packed with good stuff like oats and peanut butter. I love them, my son loves them, even my hubby is a fan (and that’s saying something…did I mention he’s the pickiest man alive??). I made some this weekend and was sitting out on my patio this morning, munching on one while scanning Facebook, and realized I should share this awesome snack with all of you!!
I got this recipe from my sister, who got it…actually I don’t know where she got it but I’m glad she shared with me 😉 . And here it is:
- 1 cup oats-uncooked(I use thick rolled oats)
- ½ cup peanut butter (or other nut butter)
- ⅓ cup honey
- 1 cup coconut flakes
- ½ cup ground flaxseed(I have substituted sliced almonds or chopped peanuts for the flaxseed and all the versions are good)
- ½ cup mini chocolate chips (or regular size)
- 1 tsp vanilla
You mix all the ingredients together and then put the bowl in the fridge for half an hour or so to let it chill (this makes it easier to roll into balls). Once it’s chilled, roll it into bite size balls and enjoy!! They should keep in the fridge for a week or so.
If you are opposed to coconut, you can just omit it (I forgot to put it in my last batch and they still tasted fine). And if you happen to not read the directions properly and put in a 1/2 cup of honey instead of a 1/3 cup, don’t despair! Just add a bit more of everything else and it’ll all turn out alright…I speak from personal experience.
